      <content>I forgot some TJ's kefir in the back of the fridge for about 3 weeks and took a tentative sniff.. smelled good.. took a sip.. was quite good.  My nearest TJ's is 30 miles away so sometimes when the bottle is getting low I'll pour about 1/4 cup kefir into a clean quart jar, top it with milk, lid it tightly, then leave it at room temp. for three days.  I shake it several times a day until it gets thick and then refrigerate it.  This seems to be good for culturing about three batches before it weakens.  By the way.. do you use kefir in cooking?  </content>
