Passover recipe needed for spinach kugel
I'm hoping someone can help me with a recipe I'm looking for.
We always have this spinach pudding or kugel at my aunt's for Passover - but she says she buys it. It's "mushy" like the inside of a quiche, and you can cut it in squares....
I've looked in all my Jewish cookbooks and googled it but haven't come up with anything.
1 pkg. chopped spinach, cooked and drained
1/2 c. chopped celery
1 1/2 c. grated carrot
1/4 tsp. pepper
3/4 c. Matzo meal or cracker crumbs
1 c. chopped onion
1/4 c. chopped green pepper
1 1/2 tsp. salt
3 eggs, beaten
Cook and drain spinach. In oil saute onion, green pepper, celery and carrot. When soft add spinach, salt, pepper, eggs and matzo meal or crumbs. Mix well. Bake in greased 8 x 8 or 9 x 9 inch pan at 350 degrees for 45 minutes. Cut into squares to serve. Can be made ahead, frozen and reheated.
