Vodka Sauce--but not with Vodka
On America's Test Kitchen last night, they made a fairly simple, yet tasting looking version of Penne alla Vodka. Has anyone ever substitute another liquor in this dish?? Just curious about the resulting flavors of a different liquor...
I've used gin in a pinch. It does turn out differently - after all, vodka doesn't have a flavor per se, so you're getting acidity and alcohol, while gin has a juniper flavor. But juniper goes nicely with Italian. For a subtler flavor, but more complexity than wine, I like to use a dry vermouth at times.
