Ruined Cheesecake? [Moved from General Topics board]

Yesterday around 8:30 p.m., I finished baking the perfect cheesecake. No cracks, perfect creamy-looking texture. The recipe called for letting it sit in the oven (door cracked) for 2-3 more hours. After the first hour, I was so exhausted (I'm actually sick right now), I went to bed, but set the timer on the oven so I'd hear it beeping and get up to put the cheesecake in the frig. The timer came and went and I slept on. At 6:30 this morning, I woke up mortified. The perfect cheesecake still sat in my oven--but is it ruined after being finished cooking and sitting out for 10 hours???? I really need some help here. I don't want to serve it to guests if it's bad, but I HATE to throw it out and cook another whole cheesecake unnecessarily!. Please help me.

  1. Have you put it in the fridge yet? It should be fine...We regularly baked cheesecakes in the AM, and left them out til dinner time, unrefrigerated, when I worked on a boat...I'd do it; most of the time, it was probably just cooling down to ambient temp....

      I don't think she will have a problem with the cheesecake as long as the oven was turned off and the door was open enough that the oven dropped to ambient temp at the end of the 3 hour period.

        It should be just fine. It'd eat it. Send if over if you don't want it. :-)

      2. I wouldnt think it would be good afterall, it is a dairy product. You don't see them sitting out at makets just on a shelf, they are always in a cold display case.

        1. You can do what you like, but to me it is a perishable and what do you do with perishables? Put them in the fridge. It's probably to late now, but check with your local bakery or call your local extension office.
