I got a good recipe for Black Eyed Peas and Tomatoes. They mentioned a Jewish Pink Rice. I would love that recipe!

Here's a recipe for what I think is the same thing "Rice with Tomatoes" ("Plow Ahmar"), from a book called Mama Nazima's Jewish-Iraqi Cuisine:

    2 tsp vegetable oil
    1 medium onion, chopped
2 cups uncooked long grain rice
1 4 oz can tomato sauce (doesn't specify further)
    4 large tomatoes, minced
    1/4 cupe chopped fresh cilantro
    2 stalks celery, thinly sliced
    1 tsp salt
    1 tsp dried dill
    1/2 tsp black pepper
    1/2 tsp garlic powder

Place a pot over high heat, heat the veg. oil, then add the chopped onion. The add the rice and stir for about two minutes. Add all the other ingredients and 3.5 cups of water. After it comes to a boil, turn the heat down to low. Simmer, covered, until rice gets tender - about 1/2 hour. The intro to the recipe refers to the bottom getting "crisp and golden" - the "ehkaka".

Wolfe - do you think this is a variation of your recipe?

    Oh - serves eight.

Iraqi pink rice is very much a staple food at the Jewish Iraqi table. It is served with almost every main course, and makes a tasty addition to your meal. This recipe serves 3-4 people as a side dish.http://www.sooogood.org/iraqi_food_re...
