Jewish Recipe--Pink Rice

I got a good recipe for Black Eyed Peas and Tomatoes. They mentioned a Jewish Pink Rice. I would love that recipe!

      Thanks, I am trying it tonite! Sounds a bit like Mexican rice that we eat all the time in Texas, only with more kick!

    2. Here's a recipe for what I think is the same thing "Rice with Tomatoes" ("Plow Ahmar"), from a book called Mama Nazima's Jewish-Iraqi Cuisine:

      2 tsp vegetable oil
      1 medium onion, chopped
      2 cups uncooked long grain rice
      1 4 oz can tomato sauce (doesn't specify further)
      4 large tomatoes, minced
      1/4 cupe chopped fresh cilantro
      2 stalks celery, thinly sliced
      1 tsp salt
      1 tsp dried dill
      1/2 tsp black pepper
      1/2 tsp garlic powder

      Place a pot over high heat, heat the veg. oil, then add the chopped onion. The add the rice and stir for about two minutes. Add all the other ingredients and 3.5 cups of water. After it comes to a boil, turn the heat down to low. Simmer, covered, until rice gets tender - about 1/2 hour. The intro to the recipe refers to the bottom getting "crisp and golden" - the "ehkaka".
