On a Friday night, a quiet place is probably going to be one of the more upscale places in the neighborhood.
Sit at the bar at Da Silvano.On the other hand, you should try Minetta Tavern before it's too late. It's always "quiet" and it's about to change hands. Soon it'll be a destination.

Walk over to Broadway and West 3rd. Leela Lounge is a nice, quiet bar. They have seating for lunch and dinner, a bar and a lounge area with couches. They serve excellent Indian inspired cocktails and have a nice quiet vibe, perfect for conversations.

Roze's N. Square suggestion is my top choice, as well, if you want quiet. The room in the far back is hushed enough for normal conversation and very civilized. Joe patron's drink of choice: wine.
Otherwise, head to Mr. Dennehy's on Carmine and Varick. The front room is loud, but the room in the back (with tables / table service / food) can support a conversation. Mr. D's is more lowbrau / pubbish than North Square. Joe Patron's drink of choice: beer.
For cocktails, head to BarFry, also on Carmine. It's more of a restaurant than a bar, really, but there is a substantial area at the bar for seating, one can usually find space, there, and the bar tenders are generally great. Quiet convo at the bar is definitely possible. Cocktails are good and potent.

You can try Shade Bar on West 3rd and Sullivan, which has wine and crepes (in addition to beer and mixed drinks). Can also try Dove Bar, which I think is also on Sullivan. Either could be crowded depending on what time you get there, but I like the atmosphere. I really like those crepes, too.

Noise level at Dove will depend on the time. It's crazy loud after ten.
Temple Bar and North Square have more grown ups and are thus quieter. Angel Share skews younger but still manages to be equally quiet.
How about (Sascha Petraske's) Little Branch? There may be a short wait on a Friday, though.

Neither will be empty, but they'll both be quiet in terms of atmosphere: Temple Bar, on Lafayette between Bleecker and Houston, and Angel's Share, on 9th st. and 3rd Ave (?). Angel's Share can have a wait to get in, and we all know that they're strict once you're in, but the upshot is a very quiet environment once you're there. Temple Bar is my favorite bar in the city, very dark and peaceful, and is usually a pretty quiet and contained crowd.
