When is the chef in/out at Fuloon?

Can anyone tell me which night(s) the chef is not around at Fuloon? From reading some chowdown reports here, it sounds like he's there on Weds, Thurs, and Saturday nights for sure, but some other reports I've read online suggest there's at least one other day when he's off and the food isn't as good. I'd assume these would be Monday and Tuesday, but does anyone have any specific info?

  1. I don't know the answer to this question, but from my anecdotal evidence I might guess that your guesses are right. I've had one sort of mediocre meal from Fuloon and, come to think of it, it was on a Friday night. Typically I get take out on Thursday and dine in on Saturday, and it is always excellent. I don't have the guts to do it, but I don't think it would be beyond the pale to just call and ask what the schedule is.

    On a related point, I read somewhere, I think, a fairly detailed description of the head chef's background, but I can't seem to find it. I know he was the head chef in some big hotel in China, but that's all I recall. Can anyone give me more information or point me to something?

      I'd be interested in seeing something detailed. All I've read is the same little blurb about he worked in a classy Beijing hotel.

    2. Chef Zhang Wenxue's bio is on the take out menu. I most frequent Fuloon for lunch, because it is close to work. I see him there often during that shift which I thought odd due to the fact that most customers are there for the buffet. I've never participated in the buffet for lunch so I have had the very good fortune of the chef preparing the items I order off the menu.
