Last year after seeing the CH video on making gefilte fish I gave it a try. I ended up using frozen whiting. It was cheap and for my first attempt I thought why not. It was too soft and if I ever do it again I would use a better quality of white fish. I have seen recipes that call for Nile Perch/tilapia. If you like tilapia it would probably work fine. More traditional recipes call for pike, whitefish and carp.

Whole foods or a really great fish monger . . . . .Santa Monica Seafood is the type of place you want but that is in Los Angeles. I live in Atlanta and just pay through the teeth at Whole Foods. If I spoke Korean -- they sometimes have great seafood, but I was worried about coming home with the wrong type of fish.
