Macapuno ideas? (aka mutant coconut)

I couldn't resist buying a bottle of mutant coconut. Now I am trying to find a way to use it. I don't have all the stuff I need for halo-halo, so I am looking for some other ways to use this item.

I am thinking of making an altulfo mango salad in sweet syrup, layering vanilla ice cream, macapuno and mango salad in a parfait glass. Any other suggestions?

    Thanks everyone! I am much less intimidated by this new product! I will definitely try some version of pie and the ice cream combo. Appreciate all the suggestions!

      Macapuno-rum ice cream
      Macapuno cream-filled jelly roll
      Macapuno cream pie
      Macapuno custard
      Added to fruit salad (especially the kind with the condensed milk dressing)
      Really macapuno and any rich dairy seems to work wonders!

        Besides eating it straight out of the jar when I was a kid (well, maybe a little more recently too..) the only other way I have ever had macapuno is served over coconut ice cream. Yum!

          Buko pie!

          Brings back almost 30 years ago riding the BLTB bus between Los Banos and Manila--those guys would hop on with their stack of boxed buko pies yelling, "bukopiebukopiebukopiebukopiebukopiebukopie!!!" Course, the other guys would also jump on yelling, "balutbalutbalutbalutbalutbalutbalutbalut....penoy!"

            A buko pie could work... I've been googling a few recipes. I have macapuno in a syrup in a jar, and so I am assuming I would not need as much sugar. Do you or anyone else have a recipe? I saw some recipes that seemed to be flan -like, and some which call for fresh coconut and coconut water, which I assume is not the same thing... Still, I have to find some way to use this stuff up, so perhaps I shall start experimenting.

            Thanks Sam! This looks like a great idea. But I'll pass on adding balut. I consider myself adventurous, but I don't know if I will ever have the guts to try balut!

              Yes, less sugar (if you have enough macapuno to make a pie). Just make it about like an apple pie.
