Costco Insta-tortas

You can feed an army with these buttery delights in about ten minutes. Not exclusive to Costco but those Kirkland chickens are perfect. Nearly any supermarket will do however.

You'll need:

1 roasted chicken
package guacamole
package sesame seed hamburger buns
large can refried beans
cheddar or jack cheese, shaved
mayo and/or sour cream
lettuce
tomato
sliced or chopped onion
salsa hot or mild as desired

microwave the beans
shred the chicken and put it in a bowl
throw it all on a table
self-serve

The buttery richness of the beans goes great with the sesame bun.
You could toss in a package of carnitas for variety as well. Just heat and put it in a bowl next to the chicken.

    I would toast the bun a bit - but DH loves it soft. I am a sucker for chorizo, which Costco usually has - if you're feeling "bad" - fry some up...yummy.
    Don't forget the beer!

      Ah, excellent. Chorizo. I'm also thinking grill some shrimp for another twist. Though that would take away from the rapido aspect of having the Costco ready-made chicken.

        Yes - that's true not so speedy. Those chickens are so speedy, there was a thread recently dedicated to the ideas. My costco is far to cart home a hot chicken, but great when it works out.
