I've been going insane trying to find a *reliable* source for dutch process cocoa--more than 1/2 lb. at a time! Surfas had it for a while, so did Trader Joe's--and now, alas! I can't find more than 8 oz. anywhere.
If I must simply buy a ton of 8 oz. thingies of cocoa and dump them into a canister, so be it. But please! I'm frantic enough when I'm baking chocolate-dried-nectarine bread for a crowd...
Thanks in advance!

I live in Seattle so I can't tell you of local places, but I've had good luck buying large bags (4 lbs.?) at my local restaurant supply Cash n Carry chain. You might check to see if there's a similar place down there - there must be. Also King Arthur sells many different types of Dutch process cocoa, but then you'll be paying for shipping and handling and the price issue might end up being a wash.
