Does anyone remember Warren LeRuth?
After LeRuth's closed, Warren went to work with Copeland and was responsible for many really great dishes at Copeland's. Boss Sauce with fried crawfish was a reason to go to Popeye's.
Good to great food for everyone isn't celebrated enough.
But Copeland cared about quality and made good food for folks with not so much money. He started with great biscuits.
He was brought down by Bridge Loans tied to the purchase of Church's Chicken.
Damned shame he's gone.
