Who is Paul Malito?

and how did he get to be the executive chef at Il Mulino?

  1. No idea. Good question. All I know is he also goes by the name Paolo Malito (with which you get a few more google hits but nothing enlightening).

      Thanks for that.

      He's listed as "Paul" at ChefDb. He seems to have come from nowhere to the head of a respected kitchen. A quick google only comes up with one relevant page.

    2. I haven't been to Il Mulino in a few years.
      But, I do consider it to be one of the best Italian restaurants in the city.

      Should I think otherwise now?

        This is exactly the thing. I don't know. If anyone could use a puff piece in one of the local non-critical hype mags like Toronto Life or DineTo it's this guy.

        Anybody have a clue? The Macallan 18 are you out there?

          Hey Googs...Yes, I have been away travelling, but have always kept in touch with what everyone has been up to here. As for your question...Paul has been at Il Mulino for a long time. I am sure he has recently been stepped up to co-executive chef, if he wasn't already one of "the chefs".

          Let me whats new in the city...I will be heading out over the next few weeks trying all of the new places. Just picked up a copy of Toronto Life's best of the year. Keep you updated.
