I have recently discovered this delicious cheese. Can I eat the rind? I eat the rind on brie and camenbert but have been unsure about tellegio. I can't seem to get an answer from anywhere.

    I've always eaten the rind. Like you've said, I've treated it as in the same "family" as brie or camembert. It's safe to eat, if that's your question. But I think it's all in your taste as to whether you'd like to. You should try it -- see if you like it. If you don't, then so be it.

      My taste says I like it! Thanks for the input. I scraped off the fine paper covering it and then enjoyed!

      Ummmm, cheeeeese..... According to this link: http://www.practicallyedible.com/edib...,

      "The rind is edible, but very strong tasting."

      Odd how many sites I had to visit to find that.
