Don't miss Buca di San Antonio in Lucca. I have been there twice and the food is not only delicious, it is a bit more creative than the typical Tuscan fare. The fried lamb and artichoke dish was my favorite. In San Gimignano, we stayed at the Hotel la Cisterna, and had dinner there each evening. It is probably the best in town, but though the food is good, I found the menu a bit boring, with the emphasis on grilled meats and standard pastas.

I second the Buca di San Antonio recommendation for dinner. Also, trattoria Da Leo in Lucca is good for lunch.
Be sure to do "Search this board" searches for all the towns & villages you are thinking of visiting. You will find many, many, many helpful recommendations already on this board to review. Tuscany gets discussed often.
