ISO Plain Cheesecake with Graham Cracker Crust

I'm looking for a simple (no chocolate, berries, mango salsa, swirly doodads) cheesecake recipe that I can make with a graham cracker crust. Does anyone have a tried and true? Everything I see is so fancied up.

    Look for the New York-Style Cheesecake recipe at the Cook's Illustrated website. You can sign up for the free trial membership to get access to the recipe. The cheesecake is fantastic. Most people who have tried it at my house flip for it. Very basic--graham-cracker crust and nice browned exterior--but big and high. Really impressive. Cut it carefully to keep it looking good.
