Does anyone have any recommendations for organic, natural, veggie-friendly restaurants in San Jose? Has anyone tried Aqui Cal-Mex? Thanks!

It says something that's not so great about the south bay food scene that this question hasn't even gotten a reply, yet.
Cafe Rehoboth, a newish Ethiopian place in Japantown, is not vegetarian, but is veggie friendly with various vegetable and legume dishes. They use organic veggies and olive oil instead of the corn oil that's used in so many Ethiopian and other restaurants. It's my new favorite for Ethiopian and one of my faves in town.
The owner will happily tell you about the ingredients she uses.

Good Karma Vegan in Downtown SJ is a "cafe"...standard vegan meat substitutes and such.

Aqui is good in a California/Fresh/Mexican/Fast/Easy/South Bay Yuppie kinda way- they have a few vegetarian dishes, but nothing specifically vegan. BUT they have enough selection that you could order something close to vegan and do omissions and substitutes.
