HELP! Trying to make sauce similar to the garlic sauce from SULTAN (downtown)! [moved from Los Angeles board]
Hi Everyone,
I'm hopelessly ADDICTED to the garlic sauce they have at SULTAN, the Middle Eastern restaurant downtown on 6th. (It's the sauce that they give you with their roasted chicken.)
Anyone have any idea on what's in it?
So far, I'm guessing some combination of:
Mayonnaise,
Garlic,
lemon juice?
olive oil?
I'm not sure about the last 2 ingredients... or what proportions to use of each.
It's definitely a creamy texture.

If it is anything like Zankou's, read on. I was also told by Caesar formerly of "Caesars Grill" that they put potato in theirs. http://www.chowhound.com/topics/60530

Fru: Interesting. Thanks! I doubt I will bother with the potatoes... I'm kind of lazy.
I have to confess that my mayo-garlic-olive oil sauce tasted really good, though visually it did not look like Zankou/Sultan's sauce. I was just wondering if it would have been better with the lemon juice or not.
Also, I just mixed eveything by hand.

Years ago I inquired about Zankou's garlic paste and was told it was just garlic, lemon juice, a bit of salt, and a bit of oil. Some recent threads have mentioned the new ingredient of the potato, and my two recent samples at Zankou do evidence a chalky carby texture that hints at potato that I do not remember from before.
