Regional Mexican Food in OC?

The fire has been lit! I've have been bitten by the Mexican food bug, for it is only recently that a life-long SoCal has discovered a cuisine that offers more than frijoles y carne asada. But am seeking chow-worthy establishments in the OC that specialize in one of the major/minor regions of Mexican cuisine. Though Tacos Jaliscos and Veracruz Restaurant are within a block of my current abode, my thirst needs further slaking.

    There are a pair of Oaxacan restaurants called El Fortin (one's in Fullerton, one's in Stanton) that serve tasty food but the housekeeping is just appalling.
