Babbo- Wild Boar Ragu

What exactly does this taste like and what is the consistency? Is it like pork or more like sausage? Just wondering and I have always wanted to try wild boar ragu and will be going to Babbo next week. If it tastes and looks like sausage I would skip it though. Hopefully its more like shredded pork.

  1. I haven't had it at Babbo, but did at Otto so it's probably similar. Texturally, it was closer to sausage, but it had a stronger taste. Almost gamy but not bad at all. I really enjoyed it. Not as mild as shredded pork.

    1. Definately one of my favorites. Give it a go, I don't think you'll be disappointed. Life is too short not to try different things.

        Same as above, we have it frequently and love it. Can veer towards gamy and dry. The first solved with copious amounts of black pepper. The second with Chianti, which is really harmonious with the cinghaile.

      2. The wild boar ragu is awesome. Its definitely one of my favorite things there. Definitely just give it a try, you will not be disappointed.

          I am not a sausage person though I really don't like the taste or texture of it. What other pastas do you recommend? I was thinking the pumpkin lune, beef cheek ravioli, and gnocchi with oxtail.

            If you are unsure of the boar ragout, just go with the ravioli or gnocchi, and you will be very happy.
