Stuff with sliced lemon, feathered onion, sliced garlic and ginger, and green onion; steam with lemon juice in the steaming water. Dress with a light mix of soy sauce, lime juice, bit of finely chopped chili, and green onion.

Snapper is great for cooking in a pouch (two sheets of parchment paper, seal the edges together by folding & crimping it together). Add your favorite veggies, a splash of white wine, and some herbs, salt & pepper. Bake at 350 for about 20 minutes. Super simple and healthy. Have fun trying different veggies in the pouch.

Also, cous-cous or thinly sliced potatoes are great additions if you want some starch in there too.

My favorite red snapper recipe couldn't be easier. You didn't say whether you have a whole fish or fillets; this is for a whole fish.

Rub fish with olive oil and bake at 400F about 15 minutes per inch of thickness of the fish. Season with salt, pepper, and more olive oil (if you want) at the table.
