Best Shad Roe Recipes

I've tried several recipes but I've found that the best preparation is to simply sautee the roe sacs in browned butter and sprinkle with S&P and maybe some shaved prociutto crisped a bit sprinkled over top. How do you do it?

    I agree. Simpler is better in this case. I like to pan fry it with bacon in a little bit of butter (plus S&P obviously) and crunch up the bacon over the top when done.

      I like it sauteed in butter with a big squirt of lemon and some parsley. I need to go see if the fish guy has any coming soon!

        BUMP!
        It's shad roe season! Sauteed in butter withy lemon and caper, bacon crumbled on top, a glass of well-chilled sauvignon blanc. Yum!

      As an aside, I've always wanted to try shad roe..does it have a specific season when it is sold?

        The season typically starts in March, but it started early this year and shad roe has been available for about 3 weeks already. I think it usually ends sometime in April, so snatch some up while you can!

          Thanks...does anyone in S.F. know of a place that stocks shad roe???
