        <content>Making soup and noticed it smelled pretty wine-y so doubled checked my recipe and I added a cup instead of 1/4 cup of white wine.  Does wine have an antithesis that I can add?  Like adding vinegar to overly sweet things, etc.  I actually do this a lot, my tomato sauces are notoriously wine laden, so I'm asking as a rule of thumb, not just for this batch of soup.</content>

      <content>Making lentil soup with 1 cup lentils, 6 cups chicken broth, 14 oz tomatoes, 1/4 cup wine, onions, celery, carrots, garlic, bacon.  I found some parmesean rinds in the fridge, so I threw those in.</content>

      <content>Were the instructions to add wine after the onions, celery, garlic were sauteed? I can see that one outcome of the increase in wine volume would be that it would take much longer for the wine to cook down and that a longer cooking period would be needed before adding in the broth. I think the outcome would taste quite a bit different if the wine and broth were added at the same time.

Given your other ingredients, if it is tasting too acidic, I'd consider adding more carrots (more sweet) and/or some potatoes (not quite a creamy element but in that direction). If the soup is already pretty far along, I'd probably boil the potatoes separately and when almost cooked, add them in. This is what immediately comes to mind. Let us know what you end up doing.</content>
