Cream Cheese Cookie Recipe

lupaglupa Mar 5, 2008 09:10 AM

I've got 8 ounces of cream cheese in my fridge with no plans for it and a playdate scheduled tomorrow for my son. Anybody have a recipe for a cookie made with cream cheese? Nothing fancy - something two little boys would like! TIA

These thumbprint cookies use cream cheese, which gives them a velvety texture and a richer taste:

    3/4 c butter
    4 oz cream cheese
    1 c sugar
    1 tsp vanilla
    2 c flour
2/3 c finely chopped nuts (optional)

Cream the butter and cream cheese; add vanilla and sugar and blend well, Stir in the flour and nuts, if using. Roll into walnut-sized balls and make a deep impression in the center of each--I use the handle of a wooden spoon. Bake for about 10 min at 375--the cookies will set but won't brown very much. When cool, fill the divots with your jam of choice.

They are a bit labour intensive, but rugelach are made with cream cheese, and are SO yummy. I use this recipe (though I'll often use a chocolate filling, instead of the one given here): http://www.epicurious.com/recipes/foo...
