Easter Brunch in Sussex/Orange area

My plans for a family Easter dinner have fallen through and my husband and I decided we just want to have a Sunday brunch on Easter morning. We live in Westchester, but we board our horses in the Vernon, NJ area (right over the border from Orange County, NY) and we thought it would be nice to have brunch "in the country" followed by a leisurely afternoon with our horses.

Anyone have good recommendations for Sunday brunch at a place that's open on Easter (I'd be happy with Granny's Pancake House, but I'm not sure they're open Easter Sunday.) Do any of the restaurants at Crystal Springs do Sunday brunch? The website doesn't indicate that. I'd love to know if there are some special restaurants in the area that I don't know about.

That "Onion" restaurant in Pine Island is probably open, but the food there is mediocre at best...

I have a lake house up in Vernon and there aren't many spots's around. I hear that Newton has a few new hip places opened up, but I'm not sure of the names. I love Granny's! It is a hoot! Perhaps the new Irish restaurant that opened right by Granny's on 23 will be open!
