Thai Corn Chowder
I am looking for a hearty, vegetarian corn chowder recipe with a Thai twist. I made a pretty good one with yellow curry, canned corn, coconut milk and some thai basil. I will be cooking for 25 on Friday - and want to serve this soup with make your own salad rolls.
Good Food had a pretty good recipe on their video podcast for a Thai corn salad (http://www.kcrw.com/etc/programs/gf/g...) that could be easily adopted for a soup. A traditional corn chowder recipe with addition of coconut milk, curry paste (green would probably go best with corn), lemongrass, kaffir lime leaves, galanga, chili, and/or palm sugar would all give it a Thai-tasting twist (say that 10x fast!), depending on which of those ingredients you can get in your area.
