Can I Make Chicken Soup With This?
My husband is sick in bed and I want to make some chicken soup... I don't feel like going to the grocery store so I was wondering if I could make something yummy and tummy-soothing with what I have already in the house:
Whole wheat rotini or white linguini
Ginger and some dried spices
Would this work? How should I go about it?
As torty suggests, I would also poach the chicken tenders in the stock, with a little ginger, and onion, carrot, celery and garlic if you have them. Otherwise, just do the tenders in the stock with a little ginger. Poach until cooked through, strain the broth and remove tenders to cool. Return stock to pot, and add your veggies and pasta (if you are using the ginger, I'd probably use the linguini over the whole wheat pasta), cook until they are done. Chop your tenders into bite sized pieces and return to the soup.
Bake your chicken tenders until just cooked through. Cool and cut into chunks.
Cook rotini in boiling salted water according to package instructions.
Place chicken stock in soup pot, add sliced celery and carrots. Add a hunk of ginger (which you will remove later) and whatever herbs you want. Bring to a boil and simmer until carrots are tender, approx. 20 min.
Remove hunk of ginger. Taste broth for seasoning, add salt and pepper as needed. Add chicken back to pot and cook until just warmed.
Place noodles in soup bowls, ladle chicken soup over and serve.
(the reason I recommend doing noodles separately and placing in bowl separately is so they don't soak up all your stock and disintegrate)
