ISO Boneless Center Cut Pork Chop Recipe

Well I have some boneless center cut pork chops in the friege. I generally prefer them with the bone but I guess I'll make them for dinner. I'm looking for a simple and easy recipe that my family will like. I think I'll make mashed potatoes too. Any ideas?

    I like to pound them kind of thin, bread them with panko and parmesan and pan fry.

      Thin ones I pound out, sprinkle with lemon pepper marinade and fry hot and fast. I serve mashed potatoes and apple sauce with them.

      If they are real thick, do the lemon pepper and grill them like a steak.

        My family loves when I make Smothered Pork Chops. I usually fry a few strips of bacon, til crisp, and remove. Dredge chops in a little flour, and brown in the bacon drippings, and remove to a platter to keep warm. Slice a medium onion, and fry in the drippings also. Add a few spoons of flour to make a roux. Add 2 - 3 cups of a good chicken stock, and return the chops to the pan for approx 15 - 20 minutes. Remove chops to a platter and top with the bacon which has been chopped up, and some parsley. Serve the sauce on the side, it goes great with the mashed potatoes.
