Sacred Chow is pretty good.
Candle Cafe is even better, but somewhat pricier...

Hi Ken, my favorite inexpensive sit-down places include:
Chennai Garden (S. Indian)
Saravanaas (S. Indian)
Flor's Kitchen (Venezuelan; also serves meat, but has many vegetarian offerings)
Taim (falafel)
A lot of people also seem to like Quantum Leap, but IMHO, it's not anything to write home about.

Just "vegetarian" is kinda hard. Do you want diner food? Asian? Continental? Middle Eastern? Indian?
Counter is a really good organic, vegetarian wine bar kind of atmosphere. A little pricey, but a nice night out.
Candle79 and Blossom are two "upscale" vegetarian restaurants. Both really good.
Lan has awesome vegetarian Vietnamese food.
Kate's Joint is great for greasy "diner" food. Greasy and gravy-ish. You just have to know what to order (hint: it's not the veggie burger. Ugh.)
Red Bamboo is vegetarian "soul food" at it's finest.
Pukk - great thai food!
And my very favorite is the Vegetarian Dim Sum House on Pell Street.

Buddah Bodai in Chinatown - 5 mott street is fantastic and pretty cheap. Tiffin Wallah on 28th street near Lex is excellent and has a great $6.50 lunch buffet. Nice place to sit, friendly service.
