I've heard wonderful things about the "Encyclopedia of Cajun and Creole Cuisine". I even make my own andouille from a recipe credited to Chef Folse (www.gumbopages.com).
Now I'm in search of the real deal.
Anyone know if it's going to come back into print? Anyone in NOLA know of a new or used bookstore that has a copy?
None of my local bookstores have it and I'd rather buy from a NOLA proprietor than line the pockets of an NYC book speculator.
