New Orleans - Source for Chef Folse's "Encyclopedia"


Seeking to expand my library.

Several Prudhommes
"River Road" I and II
"Who's Your Momma..."

I've heard wonderful things about the "Encyclopedia of Cajun and Creole Cuisine". I even make my own andouille from a recipe credited to Chef Folse (

Now I'm in search of the real deal.

Anyone know if it's going to come back into print? Anyone in NOLA know of a new or used bookstore that has a copy?

None of my local bookstores have it and I'd rather buy from a NOLA proprietor than line the pockets of an NYC book speculator.

Please help.

    If you can't find a NOLA source, I'll share one of my favorite book search engines. Often I've found old out of print books for very good prices here.

      A Tisket, A Tasket at the Historic French Market has a great price on Folse's book and they ship. The number is (504)524-8482.

      The woman that owns the place loves the book and her price is incredible. That's where I got my copy when I first moved to the city.

        I remembered that the Historic New Orleans Collection, at the Kemper-Williams house, carries a nice selection of regional cookbooks in its gift shop.

        Ordering from them. It's a great cause.

          The HNOC AND "A Tisket..." are stockout of the Folse book.

          Apparently it's going into a second printing.

          Anyone know any places that have a copy on the shelf....NOW?
