Eggplant Parmesan in Seattle

I've recently come to realize that I really enjoy Eggplant. If you've never tried it, the szechuan (or other spellings) eggplant with pork at the Hing Loon or the Sea Garden are both great. Zagi's has a very good pizza with eggplant. It is now time to try an eggplant parm. Any suggestions for good ones around Seattle? Thanks in advance.

    1. Good to see a shout-out for the 'Loon...that place rocks.

      As for eggplant parm, I make my own. Some dishes just feel weird to order out.

      1. Perhaps this is chowhound heresy, but I kind of like the eggplant parm from the coolers at Costco. It's made locally and contains only real food ingredients and no weird chemicals. It's a little spicy with big slices of eggplant and it's like $8 for a cardboard tray that serves 4-6. It's certainly good enough to satisfy a craving!

        1. At the risk of getting run out of this forum on a rail, the missus (from an Italian family) and I really like the eggplant parmigiana at Buca di Beppos in lower QA. It's actually one of the only things we like about the place, but there it is.

          It's never been greasy or over-cooked, and it's served family style so everyone can dig in.
