Culinary Vacations

Hi all - sorry if this is off topic slightly, but at least it is food related :)

I've been reading about these "culinary vacations" - basically vacations where you go and learn about a cuisine or cooking style and then take some hands on cooking classes - and I'm thinking I might be interested in going on one.

Anybody have any recommendations, either personal experiences or gossip? I'd prefer to stay in the US if possible, but Mexico'd be good too.

You can try DIY'ing it yourself..such as, make a week of it in NYC - and have a different class somewhere each day to whatever you wanted to do. It would take more planning, but may be cheaper in the long run -- finding your own accommodations, etc.

A few years ago we stayed at Casa Lana, in the Napa Valley, CA. www.casalana.com

The cooking classes were wonderful. We did a weekend and learned so much. The rooms were lovely, also much cheaper then she had just opened. The classes work for all levels of ability. We use the recipes over and over. It was a great time.

There are other classes like this offered in the Bay Area. The CIA offers classes, very expensive, at Greystone. Google cooking classes and you will find all kinds of good ideas.
