Assuming someone's willing to travel anywhere in the Bay Area, where's the absolute best?
My nominations (SF / East Bay bias since I don't get down the Peninsula or to the South Bay much):
Shanghai: Jai Yung, SF
Sichuan: Z&Y Garden, SF
Muslim Chinese: Darda, Milpitas (any recent comparisons with Fatima and Great Eastern?)
Peking-style hot pot: Old Mandarin, SF
Hong Kong seafood: Koi Palace, Daly City
Hong Kong after midnight: Daimo, Richmond / Yuet Lee, SF (stick to seafood)
dim sum: Hong Kong Flower Lounge, Millbrae

I'd put China Village (Albany) miles ahead of Z&Y for Sichuan, though I happily eat at Z&Y often. My one time at Zone 88 (SF, Portola) was better than a typical meal at Z&Y, too, but others on the board have more experience at Zone 88 than I do.
No Hunanese category? I return to Henry's Hunan again and again but would love to hear of someplace better.
