2008 New Recipe--

My fingers decided to hit a key that my brain didn't want to, hence the dangling topic. Anyway, I was out of town last week and had to get caught up this week. Thus, I didn't have a new recipe last week. This week's new recipe is something that's already appeared here, Chickpea Cutlets from Veganomicon.

These were good. Not brilliantly flavored, not "company best", but darn tasty. I'm not a vegan (or even a vegetarian), but I am trying to eat fewer animal products. Anyway, they make a tasty veggie burger and I will definitely make them again. I did change a few things to reflect using what I had on hand--I added an extra 1/2 tsp lemon zest, I used smoked Spanish paprika rather than Hungarian, and I omitted the parsley. The recipe is right, these ARE fast! I made a side of Israeli couscous with dried cranberries to go with the cutlets last night. Today I ate a leftover cutlet as a burger for lunch.
