veal dishes suggesions? recipes? over pasta? marsala cream?

First time inviting Mom and Dad over for a real dinner since I've taken up cooking.

Going to make a caprese salad
some sauted pesto shrimp

and i want to make a veal dish over pasta.....maybe a marsala cream sauce??? anyone have any recipes/suggestions?

also going to make roasted garlic and parm asparagus on the side

  1. Randall: That's a pretty heavy menu--how about pan-roasted veal chops instead of veal over pasta??

      I gotta agree with mnosyne. Your menu so far is Heavy hard flavors. The beauty of the delicate veal would be blown away and seem a "miss".

      K.I.S.S. Works very well in food and menu planning as anyplace else.

    2. make a veal picatta instead of marsala- nice, light and lemony. If you must have the pasta do it as a side with a little olive oil or butter and a sprinkle of fresh grated parm.

      1. I agree with the veal picatta serve it on angle hair pasta. If you and and your parents are hearty eaters veal saltimboca will stand up to the rest of the menu.

          I LOVE veal saltimboca! Do you have a good recipe for it?

          I've made this many, many times on cold winter evenings for friends and it has always received the "I'm going to lick my plate if nobody minds" comments. A saute of cherry tomatoes and asparagus tips or roasted fingerling pots & steamed asparagus. Really amazing and impressive. Enjoy/
