Chicken kiev or something like it

less all the fat, amy recipes?

    I'm not sure how much fat you're looking to cut, but I think the traditional recipe is fried, and America's Test Kitchen has a great recipe where you bake the bread crumbs in a tiny bit of oil. They also use a little Dijon in the filling to bump up the flavor, which I love. When I made it, I didn't need all the butter, either. I would at least go look at it to see if you like it. I can assure you that it's at least delicious.

      Well, it won't be Kiev without all the butter, but you could use a neufchatel filling. I don't see the point. Make something else, maybe stuffed, breaded and baked?
