Meyer Lemon Oil

I'm trying to make a recipe that calls for drizzling meyer lemon oil over vegtables wrapped in prociutto - does anyone know if i could substitute lemon juice mixed with olive oil?

    If you have a Meyer lemon, it will actually be better than the flavored oil. Meyers are still in season, so you should be able to nab one. A regular lemon will not give you that special Meyer punch.

      You wouldn't want to do lemon juice mixed with olive oil. Flavored oil is infused from the rind of the lemon, there's no juice involved. If you have time, take about a quarter cup of a light olive oil and soak strips of Meyer lemon rind in it. The flavor should infuse overnight.

        You can just grate the rind and get enormous flavor -- no need to infuse overnight; the flavor is there at the git-go. I don't know what you mean by "light" olive oil. I would use an extra virgin with a peppery finish for this dish, not anything I would call "light."
