Can I save this pork?
Okay, so I knew better, but still I went ahead with a bad idea...my husband purchased 10 lbs of (not top quality) pork loin, and I've been struggling to find things to do w/ it. I can only eat so much roasted pork!
So I experimented w/ recipes inspired by cochinita pibli, which I've never had but always wanted to try. And, because I have a 4 month old baby and just returned to work, I'm pressed for time and looking for short cuts.
So I marinated the pork overnight, and then placed it in chunks in my crock pot on the low setting for the last 5 hrs. The meat tastes good, but no surprise here, its pretty dry.
Any thoughts? Should I keep cooking to break it down? Stop cooking b/c I'm drying it out? Just say oh well and shred to use in tacos (the original plan?)

My suggestion would be to remove the pork, shred it with a fork, and add it back to the liquid in the crock pot along with a little orange juice. Let it continue to cook on low heat for a bit, and make tacos out of it. It makes great tacos with pickled onions and chilies. Maybe a little queso fresco too.
