A "special" restaurant in Seattle for hubby's birthday

Hi,
I am looking for a "very special" restaurant in Seattle to take my husband for his birthday. We don't get out that often because we have a young son.
My husband enjoys great wine, and likes to talk it up with the sommelier. So, a restaurant known for excellent wine would be the best choice.
Suggestions?

My husband and I did the tasting menu with wine pairings at Union for Christmas this year. It was really nice, the food and wine were excellent, and the sommelier was very knowledgeable and friendly. If you decide to go this route, give them a call. They will basically tailor everything to what you want (number of courses, wines, etc.).

I'd consider 0/8 Seafood Grill & the Twisted Cork Wine Barl in the Bellevue Hilton (right by Bell Square). They have a nice wine list and some great appetizers, plus they do interesting wine flights which are fun for side-by-side tasting. Also, Purple downtown and on the east side gets some good press (I've never been there, but the downtown one looks cool).
You might also consider Rovers - their wine list is nice and the staff is very helpful and knowledgeable...and you can do the wine pairings to the tasting menu, which is fun.

Brasa, for a great and reasonably priced wine list and wonderful food, and a romantic room. Try the cheeses displayed near the door. Fabulous!

"Great wine" is a tricky parameter. Canlis' list is extensive and includes older wines, but expect to spend hundreds of dollars to get to the "great" category. Service and food at Canlis are very good however. My husband is a huge wine collector, but likes to find the gems that don't cost a mortgage payment. If you can leave downtown, Cafe Juanita is a very special restaurant with fantastic food, service, ambience and two well trained sommeliers. Their list is not the biggest, but has some very nice Italian wines at reasonable prices. We had an amazing New Year's Eve dinner there, not always the best night to eat out, and Heidi did a fantastic job.

67 at the Edgewater. Went recently with oenophile friends and were delighted with the knowledgeable staff and interesting wine selection. Food was good (not great) too.Decor & atmosphere fabulous. Very romantic.

Well, the wine list at Canlis is huge, and has won numerous awards~ he'll probably have a great time just reading through it.

One question: when you say Seattle, do you mean Seattle proper, or can it include the 'burbs?
