Falafel mix-Give me ideas

I have a bag of bulk falafel mix and would like some ideas on what to do with it. I would prefer non-meat ideas but that's not esential. It's made with fava and garbanzo beans. Thanks in advance.

    Just wanted to let everyone know how my first attempt at falafel came out.

    I started with mix that was recommended to me. I mixed 1 cup falafel mix with 3/4 cup water. I also added a zuchini that I grated into the mixture. I formed into balls with my 2 tablespoon scoop. I flattened these once they were in the non-stick pan with about a tsp of oil per batch. Making 5-6 at a time.

    I then made a spread of plain yogurt, a tsp of tahini, and one clove of garlic chopped. I also had lettuce, chopped tomato, and cucumber.

    We put all of this into pita bread. They were delicious. I liked the falafel on it's own but with the pita and the spread it all came together very nicely. My family loved them.

    When I try some of your other suggestions I will post again. Thanks again.

        I use one of those little falafel scoop things I bought on a Lebanese store in Montreal - it makes little discs rather than balls of falafel.
        Here's an idea - how about a Scotch Egg made with falafel on the outside - just wrap some batter round a shelled hard-boiled egg and drop it in deep fat for a bit. When you cut that in half you will get a real nice looking appetizer or lunch.

        I add cilantro,chopped scallions to the mix and make falafel's I fry the balls in olive oil to make them crunchy.Top with yogurt,tomato and chopped mint(on pita bread).

          This is a meat recipe but the Near East company, who makes a boxed falafel mix, has a recipe for meatloaf using their mix. I love the nutty legume-y flavor the mix gives to the beef and it serves to remove some of the fat and add some nutritional benefits to an otherwise fatty dish. The recipe should be on their website but, if not, I have it somewhere at home.

                :-) I like that. I am going to try my hand at felafel tonight as a matter of fact but I bought it in bulk so I have allot of it. I was just wondering what else I could do with it.

                  Oh good, I hope you will post results. I have had a box of mix in my cabinet for about 2 months and keep putting off trying it. I would love to hear how it goes!

              Use it for some kind of pot-pie type casserole - a stew, topped with a falafel crust.

              Mmmm, now I want to make that.

                You could use that for Indian pakora batter - I think the reg. recipe uses chickpea flour. Onions, potato, peas - deep fried - enjoy!

                  A recipe idea I got out of one of the susan fishbein cookbooks is to use teh falafel mix as breading for chicken fingers - it cam out great -
