Momofuku Ssam Bar does a crispy pig's head terrine that is quite good. Effectively, a meat heavy terrine--as opposed to, say, cartilage from the ear and nose area--that's coated in bread crumbs and fried. The Momo version is served with a mustard sauce not unlike gribiche. The dishes could be quite similar.
Like that they're now serving smoked beef's tongue as a charcuterie selection.
Lovin' all the offal. Durham needs this.
