Quiche with shallots, what else?

I have a ton of shallots and a frozen pie crust. I'm thinking quiche but, I'm unsure of what else to put in it. Maybe leeks? What do the 'hounders think?

    gruyere, bacon or ham. Leek is too much like shallot I think. You could saute the shallot, or roast and/or caramelize.

      Leeks are always good, maybe add some veggies like broccoli, spinach or cauliflower with a good sprinkling of gruyere and asiago. A little chopped up bacon or ham never goes amiss either.

        jfood goes with cocktailhour with a meat and cheese, and would vote for canadian bacon and gruyere.

          This time of year halved cherry tomatoes are good. Have the cut side up, they will start to caramelize and are delicious.

            shallots, wild mushrooms and/or butternut squash, sage, gruyere
