Fried chicken

I'm looking for a fantastic Fried Chicken recipe that doesn't need to be deep fried. Shallow fry is fine, but I don't have a pot big enough to deep fry more than one chicken piece at a time. Please help!

  1. do you have a wok ? i have started using my cast iron wok to fry chicken iin and it works just great.

      I don't have a wok just a big frying pan. But, I get your idea, I think that might work.

    2. Don't know if this qualifies as "fantastic" but we are trying to diet and watch calories. This is oven fried chicken. Preheat oven to 375 and cover large shallow cookie sheet with aluminum foil. Wash and thoroughly dry chicken pieces. Arrange them in pie plate filled with about 1/2 - 3/4 cup mayo (can use low fat). In another pie plate or shallow cookie sheet, place about 1 cup crushed corn flake crumbs, or bread crumbs or crushed potato chips (not diet version, LOL!). Season breading with s&p, paprika, garlic & onion powder, whatever herbs (fresh chopped parsley) you like. Dredge chicken pieces coated with mayo in breading, place in single layer on prepared cookie sheet, skin side up. Bake 45-60 min for pieces from 4-5 lb. chicken or until chicken registers 175 in dark meat. Can also do with b/s breast, use less baking time depending on size. Good week night meal and DD (16) can prepare.
