I really love the seaweed salad that seems to be at every single sushi restaurant. I think it is usually too overpriced to order, particularly when I can eat about 3 times the amount they give you, so I'd like to try and make it at home. Does anyone have any ideas or recipes? I have a great Asian market nearby and several health-type food stores. Thanks!
it's not necessarily arame.
the salads with the bright green, narrow, stringy seaweed are made with ao-tosaka nori [green] and sometimes shiro-ogo nori [white/clear] or agar strips.
the other common salad made with multicolored seaweed of various shapes & sizes typically contains a mixture of some or all of these: wakame, arame, dulse, hijiki, ao-nori, & agar strips.

IIRC you are in WNC? Earth Fare always carried dried sea vegetables in their macrobiotic foods section. They generally carried products by Great Eastern Sun (a WNC company BTW). Here is a link to their recipes. I have tried some, recall them as very good.
i posted a similar recipe in the japanese octopus salad topic...you can certainly omit the octupus. also, if you're using refrigerated, prepackaged seaweed greens, make sure you thoroughly wash them in water to get rid of the salt that they are usually packed in...i wouldn't really recommend rehydrating dried seaweed, as it usually doesn't have the chewy texture that the salt packed stuff does...
basically, i salt thin slices of cucumbers and let them sit for a few minutes and then drain out the excess water. then in a separate bowl, i combine 3 T vinegar, 1 T sugar, 1 tsp chopped garlic, 1/2 tsp sesame oil, 1 T sesame seeds, and 3 T dashi stock. add seaweed, sliced boiled octopus, and green onions to the cucumbers and toss well w/ the dressing. chill before serving.
i don't usually measure, so those proportions might be a little off, but since you will prepare the dressing separately, taste it before adding to the salad. also, i just use a little instant dashi powder dissolved in hot water - cool before adding to salad.
also, try looking up sunomono salad recipes...that will probably result in much more accurate measurements. :o)
I think your biggest obstacle will be finding the seaweed mixture used in this salad. I live in the SF Bay Area and am lucky to have lots of Asian markets to shop at. Not once have I seen the seaweed mixture sold for this salad, although I'm wondering if they are sold dried and you could rehydrate them...
I can buy it prepared way cheaper at my Japanese markets in the city, but I can see the appeal of making it at home.
