        <content>I'm making a spaetzle with a creamy mushroom ragout tonight. Does anyone have any suggestions for a nice green, possibly crispy, counterbalancing vegetable dish? Thanks in advance.</content>

      <content>If your mushroom dish is creamy I would do some sort of salad with a traditional Hungarian salad dressing.  The first that comes to mind is cucumber and onion. But you can also use the dressing for any type of lettuce salad. 

For cucumber and onion salad, use a grater or mandalin to thinly slice the cucumbers and onions.  You can also add some thin slices of of tomato.

Salad Dressing (adjust amounts to how much you are making).
1/2 cup water
1/2 cup vinegar
1 tablespoon sugar
1/2 teaspoon salt.
Freshly ground pepper
1 teaspoon dried dill or 1 tablespoon fresh dill finely chopped

Mix together in a small bowl or 2-cup glass measuring cup.  Pour over salad and let sit for at least 1/2 hour before serving.  Hungarian salads are traditionally served limp after sitting in the dressing for a while.  If you want the salad to be more crisp, don't let it set more than 10 minutes before serving.  

Also on your mushroom ragout...I suggest adding some paprika and using sour cream instead of whatever creamy ingredient you were planning.   
Serve with rye bread.
