This is my first time making them. Should I grill in the foreman grill first with a cooking spray? I wanted to wilt some spinach and add garlic, some Aloute (sp) low fat cheese, maybe a little of whatever cheese is in fridge. Then stuff and warm in oven?

I make stuffed portabellas quite a bit and I don't precook them before stuffing and baking them. I like them stuffed with a crabmeat mixture (8 oz cream cheese, 8 oz crabmeat, 1 pkg Lipton Garlic and Herb mix) or I also have a recipe for Spinach Artichoke Stuffed Portabellas on my website (http://28cooks.blogspot.com/2008/01/spinach-artichoke-stuffed-mushrooms.html) with is also super tasty. Good luck!

I usually roast my mushrooms in a 400 degree oven for about 10 - 15 minutes. It releases some of the moisture. Stuff with mashed potatoes mixed with blue cheese, scallions, butter, and cream. Bake for 15 minutes.

They came out pretty good. I melted a little parm, 1 slice of provolone, few spoonfuls of light cheese spread, garlic, fresh herbs with the spinach, then topped with crushed bran chex, and broiled the tops. We had no bread crumbs since starting South Beach diet.
