sauce for cold vegetables??

I'm serving some roasted red peppers, zucchini, and red onions as part of my lunch this saturday. i'd love to put some sort of delicious dip/sauce with them. the vegs were roasted with only olive oil and salt, and i'm serving them at room temperature. what would you serve?

      1. With a lot of vegetables such as carrots, fingerling potatoes, green beans, etc. I would agree with Gio and say aioli. With these particular vegetables, however, I think the sauce should be bagna cauda, or, if you don't want to worry about keeping the sauce hot, a salsa verde with anchovies, parsley, garlic, olive oil, red chili flakes, maybe some vinegar. Other herbs could be added as well.

        1. Muhammara! Not entirely traditional (typically it's just served with pita or grilled meat), but SO yummy.
