(MSP) Hamburger Ground on Site?

My husband has a hankering for Tiger Meat. What's tiger meat you may ask? Well, it is South Dakota's answer to Steak Tartare. It starts with raw hamburger, you add seasoning and raw egg, let it sit in the fridge for 24 hours, then serve on crackers.

I want to indulge his craving, but only if I can find somewhere that grounds hamburger on site and doesn't have it sitting around for days, or even hours. In other words, I want to go to a butcher who will grind it once I get there.

Anyone know anywhere in Minneapolis, St. Paul, or the first ring suburbs that will do this for me?

    You probably won't find any places that will admit to serving this... It's very strictly forbidden in the Minnesota food code. That's not to say that there aren't some old-school neighborhood bars that offer it to their regulars.

      You could grind it yourself in your kitchenaid stand mixer. Or you could just ask. I am sure that any full service butcher would grind a roast or whatever for you if you tell them. You could try Clancy's or Everett's or Von Hansens...
