question about fresh eggs

I usually buy store bought eggs, but a friend just gave me some of his farm fresh eggs - they are truly wonderful as an egg dish - scrambled, over easy, etc...but i'm wondering what if any difference I will notice in dishes where they are not the main ingredient (quick bread, muffins, etc...). So my question is, should I stick to the farm fresh for breakfast, and use the store bought in all the other stuff? thanks

      I think she means should she save her farm eggs for those dishes, because her supply is not unlimited.

      I think so! In baking etc. use your store bought and eat your farm eggs in omelets and the like. Yum!

    2. I tend to use my "fresh" eggs for poached eggs, and save other ones for baking etc.

      1. You probably won't notice any difference using farm fresh eggs with something like muffins, etc. Because of this, I try to save my farm fresh eggs for the dishes where I definitely notice the difference - like strata or fresh pasta or ice cream... It all depends on how well the chickens are laying - this time of year not at all and while over the summer they will be coming out our ears.

          Agreed, don't waste those wonderful fresh eggs on baking... I make this at least once a week, often more, and with farm fresh eggs that have those deep, deep yellow, almost orange yolks, it's absolutely divine.

            thanks for the GR link, very interesting way of cooking eggs, will have to attempt this weekend...can I use sour cream for the creme fresh? Also, the 2nd link didn't work for me.

          3. Please do note that your farm fresh eggs may vex you if you are hard cooking them for any application. Fresh eggs do not peel as well as those a week or more old. I always use my farm eggs fresh, and if I have too many, mark the date so that I know when they will be good peelers hard cooked.


            1. I'm with the others in that I like farm fresh eggs in dishes where I can actually notice the difference. Additionally, the chickens on our farm lay eggs that vary in size, so it's sometimes hard to bake with them.

                I totally agree. I get fresh eggs from someone that works with my sister, and they are just too rich-tasting and wonderful to "waste" on baked goods, etc.
                I love the richness of the yolks of fresh eggs so much, I'm happiest just barely poaching them then using them in a Benedict, or just barely over easy.
                And yes, use the "other" eggs for all other things, including hard-boiled. Fresh are VERY hard to peel.

                  I could not resist responding to this one. I have been fortunate enough to have access to "fresh from the backyard" eggs and we have always used them for any application - cooking "as is", baking, making pasta, etc. There is no difference in using them in baking, but if they are rare, and therefore special, I agree with the others to save them for eating in a more pure state.

                  As a side note...I live in NJ in a pretty surburan neighborhood. My father raised chickens as a hobby until about 10 years ago, so I grew up "tending" to the chickens. I moved about 6 years ago into a home where my neighbor is raising chickens. He is thrilled to have somebody (me and my teenage kids) who will chicken-sit while he and his family are on vacation. Our payoff for chicken sitting over the summer is use of their pool while they are gone and free access to fresh eggs whenever we care to collect them from under the chickens.
