Portale's gotham bar and grill cookbook

I made a lamb shank from Mr. Portale's first cookbook a few years ago, and it was out of this world. Really simple recipe, but delicious. Since then I lost a whole bunch of my cookbooks in a basement flood; does anybody have the book/recipe? thanks a million, faye

  1. 1/4 cup olive oil
    6 lamb shanks, trimmed
    coarse salt and freshly ground white pepper
    1 medium onion, coarsely chopped
    1 medium carrot, coarsely chopped
    1 large head garlic, cloves separated, unpeeled
    2 cups dry red wine
    1 1/2 cups brown chicken stock
    1 1/2 cups water
    4 sprigs thyme
    3 4-inch strips lemon zest
    1 teaspoon whole black peppercorns

    Bring oven to 300. Salt and pepper meat. Brown in olive oil. Remove. Take out all but 2 tablespoons of fat. Brown vegetables well. Add wine and reduce to 1/4 cup. Return shanks. Add stock, water, thyme, zest, and peppercorns. Boil. Cover. Bake in oven until tender, turning occasionally.
